First off, which job would you enjoy both professionally and personally - technology, work/life balance, management, colleagues, salary, other comp, vacation days, flexibility, training etc.
Next up, sustainability of the businesses. Are they making a profit or how is the plan going to make a profit at some point? If not profitable, what’s the runway? How’s product/market fit? What about a history of success expanding their market? What’s the competitive landscape looking like?
Some meta commentary: payments is a sucker’s game, with margins dropping year on year as more businesses enter the space. There are really very few angles for success, one of which is scale (wholesale price reduction). Is the gateway likely to be top-25 globally, or too-5 in its vertical in the next 10 years? If not, it’s either going to fail slowly, get bought by a much bigger competitor or invent a new angle to be successful, with the first two being far more likely.
"Low-code" is an empty concept, while "payment" is a solid one
All the rest is in the details - I can easily imagine a promising "low-code" company despite them playing in this overhyped and shaky niche, and a terrible "payment gateway" company despite their current cashflow etc.
In this economy go for the one where you get paid more. Just my opinion.

I am in same situation. Its been 2 yrs here and I happy with what I am doing but need more salary to survive. The Fintech one will pay more but I am not sure how fintech is doing.

Probably switching to a new company will give me a opportunity to work on a new tech stack and more learning.

It's been 2 yrs here at low-code and working is actually fun. It's a startup of 40 people so I mostly work with TL and founder and if I switch to PG then I will have to work with managers. They have around 1k employees.

The low-code one is daily work from office and the PG is hybrid (3 days office)
