If you don't offer me Apple Pay and skip the whole payment step, you better offer something I can't get anywhere else because otherwise, I'm bailing.

Honestly, Apple has really knocked it out of the park. Stripe is okay and works well with autofill, but it's still extra friction.

Yeah, apple might be doing something a little anti-competitive here.

What if some of my customers use a non-Apple OS to access my site?
That's not really at all how implementing Apple Pay works, and would not affect your non Apple customers. Also, even Apple users can opt to not use Apple Pay if it's offered on a site.
Stripe is the processor, Apple Pay is the method. Stripe supports Apple Pay.

That's the wrong question to ask. Stripe supports Apple Pay but whether or not they do, Stripe is a B2B implementation detail that customers shouldn't ever know or think about. A tiny sliver of them may happen to have heard of Stripe, but your average customer hasn't read Payment Systems in the US, by Carol Coye Benson.
The point is that Strip supports more than one method of payment.

Customers would think about that if they are, for some reason, not enrolled in Apple Pay, but other methods were not supported.

For parent, maybe. For me, no.
