She isn't accidentally telling you. She is required to tell you. If you have a problem with it tell her you don't wish to be recorded.

Actually, in the U.S., it depends on what state you're in. Some states (e.g., NY) have "single party consent" laws, in which any party to a conversation can record it without asking permission of the others. Other states (e.g., CA) have "all parties consent" laws, in which all parties to the conversation have to consent to being recorded. This document lists the laws for each state:
