Very timely. I just moved house and am looking to buy some new knives (avid amateur chef!). I am no knife expert, but I thought that at this price level, steel hardness (HRC) is a property that a prospective buyer looks at? I don't see this listed anywhere for these knives. Edit: I noticed that it's in the body text of some knives. You might want to add that info to the data table under each knife - that's where I looked first :) |
