Linux can sometimes be a pain in the butt to get working well with a projector. Did the guys doing Linux demos have technical difficulties and end up having to pantomime their demos?

I guess, they just need to mirror the display.(ubuntu,mint,fedora,arch) does works perfectly.

which linux distro you are specifically talking about ?
