Heh, I'm well aware of NathanM - his initial work on Sous-Vide on eGullet is what got me started with it. Modernist Cuisine is pretty amazing, but not quite the same sort of thing I was thinking about: it isn't exactly newbie-accessible, either in price or approach. |
