I would be happy with just OTR style encrypted messaging that actually works on android, ios, windows and osx as a big first step, with the text contents being government subpoena or hacked server proof.

Can't find it. ChatSecure on iOS is a crashy mess and TextSecure is android only. TextSecure oddly requires phone numbers vs some sort of login system too, so I can't even use it with an android tablet for example last time I checked.

Cryptocat is available for your browser, Mac, and is coming out with iOS and Android apps in December.

That's because it's an SMS app, not an IM app. It probably has the best crypto going though, and the user experience is nice (well, until you move to KitKat where every bloody app wants to eat your text messages and you end up with all your texts across more than one of them).

God yes, for some reason you can't disable apps like you could in Android 4.3. Overall kitkat has really been bugging me, I think I am just going to go back to 4.3 and stick with it until some other platform comes along.
That is why i'm suggesting it also becomes a more generic IM app, with all 4 platform support. It seems like they are working on that although.
There's no way to stop your communications partner from logging all your chats.
There is never a way to stop that if you want to communicate with someone over a device. That is why DRM doesn't work.

A feature of OTR is you can't prove who wrote which message.

Depends on the standard of proof.

If you get a device and download a bunch of logs, that's going to be enough for most purposes unless you're actively engaging in counter-espionage (planting fake logs, mixing up your comms etc.)
