Why wouldn't the same happen when we talk about other forms of prejudice, e.g., racism?

It does, if what you're discussing is outside the realm of something that is clearly racist. If it's open for discussion, people get angry very quickly.
The same does often happen when you talk about any form of racism beyond really appalling, very clear acts.
