Can you give some pointers to which papers specifically? I also have multiple e-paper displays and would love less noise

Not surprisingly, the Wikipedia article has a good list (https://en.wikipedia.org/wiki/Dither#Algorithms). The 'cool kids' these days tend to use something called 'blue noise' which minimizes visual artifacts. Color dithering is fun because dithering one color can interfere with other colors so you have to consider it as a color volume rather than simple binary on / off dithering.
