Large publishers (and studios) tend to go for large games and usually some combination of sure bets (series, remakes) with a smaller number of riskier bets (new properties). Fortunately there are tons of smaller producers and we have digital storefronts (Steam etc.)

Medium-sized publishers like Devolver, Annapurna, or Humble Games are an interesting middle ground.
