I don't think counting SKUs gives you a very useful metric. For example my local grocery store has a whole isle of different flours. Sounds great but its just a couple of brands each having their own interchangeable version of five or so standard flours with barely anything outside that range. That's not to stay that having choice for the "same" product is never useful but clearly not all additional SKUs provide the same amount of additional useful choice.
