Honestly if you don't have a specific reason to target iPhones then buying a 2nd hand Pixel 8, putting GrapheneOS on it then pushing an "app" in whatever language you want on it, sure can be Java but can also be Python, Julia, whatever you want really especially on it directly using Termux, could be a better use of your time. By the time Xcode starts you'll already be outdoor testing against the next transformer.

Am also using Xcode but not experiencing crashes, so it could be to do with his environment. I've got Xcode running now since.. 2003? It's not always been perfect but pretty stable if your env is right.
I do imagine Xcode is stable so it's mostly a suggestion to making testing on an actual device more convenient. I imagine for somebody who already have a proper pipeline it doesn't matter but here it doesn't seem to be the case, hence offering an alternative.
