Looks great! There's a bunch of tools in that niche by now but there's space for more, especially when it comes to making the self-hosted database experience better with monitoring, backups and restore (https://blog.notmyhostna.me/posts/what-i-wish-existed-for-se...)

I'm currently using Dokku and I'm more in the market for things I can run on Hetzner / OVH.

I agree with you on this, for this reason actually I use Neon tech and in outplane.com you can create Neon tech serverless db and take backup in intervals, but your need is a fair need.
