How would you describe their taste? Because having tried fresh oysters (which I found to be awful) I imagine them just tasting like the ocean (not a compliment).

Aha - it’s that expression I use to describe it: “it tastes like sea” - or ocean, if you will.

Subtle and delicious.

If they tasted like ocean, they probably weren't that fresh.
