Is there a chance for me to get a eGPU (external GPU dock) for my M1 16GB laptop to plunge thru this model?

The smaller IQ2/Q3 GGUF quants should run "fine" on your existing 16GB.

(also, I don't know that M1 supports any eGPU...)
