At this point it makes sense to just buy an Nvidia Quadro RTX 8000, with 48gb of ram. Especially since I will be using it for LLMs locally.

Also, for gaming, it makes financial sense to just buy a console at this point especially since these GPU prices are stupid pricey.

consoles only make financial sense if you think about the short term.

They cost monthly, games are more expensive, no cheap future upgrade path and backwards compatibility is a gamble.

Even worse: Poor mod compatibility. There are numerous games that are pretty lame without some community mods, or are fun for a single playthrough but there is a whole galaxy of mods that give it a new life afterward.
