If I have a 4K display, do I still need to worry about font rendering settings?

If it's small like 15", probably not. If it's 32" or more, probably yes.

Quite likely no, as even grayscale antialiasing is going to look amazing in 4K.

macOS has grayscale antialiasing on by default.
