Have you looked at DietPi as a low resource OS? It's my default choice for a SBC like the Pi. They have versions for x86 too.

I haven't, but tbh, the OS is already using next to zero resources, chromium is the real issue. Of course I could just throw a more peweful Pi or SBC at it, but that's not my goal.
