Salad chain? Possibly among the younger more Westernized crowd but not a natural part of the diet. There is no salad culture in most of east Asia — folks there don’t really go for raw vegetables (pickled/fermented/steamed/stir fried yes, but not raw mixed greens). It could catch on among the urban cosmopolitan crowd though. I’ve gone all my life without ever missing salad. I just think it’s something that hasn’t had its full chance to shine in the sun, but I’m probably wrong and ignorant. Some liang cai is probably the most I will ever see
