Some phones have multiple SIM slots.

I've never used eSIMs but seeing as they're just bytes, I would imagine you could switch them much like wifi networks.

One eSIM for Google Fi + one physical SIM for Visible.

You can switch which network is used for mobile data in the settings. (As much as I wish it had an option to failover to the other rapidly ...)
