"Coffeepocalypse" is certainly the kind of thing you'd expect from a prompted LLM. And it provides an easy answer to "why can't I understand the thinking behind it": there isn't any, it's just a sequence of words.
There actually is a real meaning to the term, but it isn't fears of coffee being bad but that in the future coffee won't be economically feasible thanks to climate change and most current coffee drinkers will not longer be able to drink it on a regular basis.
