I'm no expert but somehow I think post-quantum cryptography will become what IP6 is to IP addressing: we all know very well what problem it solves but the problem doesn't hit us that hard in practice that we are actually forced to make the switch.

It’s not quite the same, because the problems solved by PQC depend on technological developments (practical quantum computers) that may or may not materialize, whereas the problems solved by IPv6 are independent from such developments. And we already are at the point were IPv6 is necessary, due to having run out of IPv4 addresses.
