Mold is used on dozen varieties of cheese, on cured meats like salami, in Asian cuisine (Tempeh/Oncom, miso paste, soy sauce). More generally, fermentation and bacteria are essential to most cuisines in the world. If you feel put off by the idea of eating mold, I feel sad for your taste buds. |
