What I don't get is why they serve hot coffee on planes with these ever present risks.

The coffee is generally not hot enough to cause burns, especially given that you will be drinking it immediately upon serving.

That hasn't been my experience. I mean it's not McDonald's hot, but it's hot enough to cause damaage.
