This is so foreign to me as someone who has become dependent on LLM's

I have to assume they are simply misusing the tool (or work in a very specific niche that somehow doesn't benefit from it).

Does it solve problems for me? No, not really - but it's a huge productivity booster in helping me find solutions.

Most people who dismiss AI have simply used GPT-3.5 or some crappy model on huggingface and concluded that AI is useless.
Not my case though. Oddly enough i find 3.5 more accurate in some cases.
What LLM are you using? I use ChatGPT and StableDiffusion semiregularly. Maybe I just suck at prompts, I find them very hit and miss, even for very simple tasks.
