People only use 20% of Words features. The problem is different people are using a different 20%. This is the nature of software, there is usually someone using a feature and for them its critical while others have no idea it even exists.

I'm a big fan of features. At any point, I could randomly be invited to a project where I want to use one of the other 80% of features. I like one size fits all apps instead of fragmentation.
