I think you’d get a kick out of Chassol. He’s a French composer building entire compositions around the contours of environmental sounds. I’d start with his Big Sun record. Listen to ‘Birds, Pt. 1’ and you’ll get it right away. He also does these compositions he calls “ultrascores” where he’s composing to scenes from TV shows.
