My question to this is "why go through the trouble of doing this when there's operating systems where you don't need to do a debloat step"

I realize the answer is that people use Windows because the software they use requires Windows, but it just irks me that this is the solution to not wanting a "bloated" OS.

There are versions of Windows that do not have the bloat issue. Enterprise or Education are good options.
I was considering getting Enterprise edition, but the side by side comparison between Home and Enterprise did not mention the lack of bloat.

It showed literally only 1 checkbox about some security thing.

Ended up going with Linux since it seemed OneDrive/malware was inevitable.
