"Consumer experience" seems like such a strange way to frame this research, when it's just about the general flattening of pleasurable activities over time as they're repeated.

Agreed. Having admittedly only read the abstract, I find it odd that it's framed around "consumers" and not just "people."
I assumed that this is because this research is really intended for the benefit of marketers.
