I understand your frustration! Depending on what your software needs are for everyday work, you might be interested on any UNIX like system (besides MacOS) for example: OpenBSD, FreeBSD, GNU/Linux distribution. Afterwards what you need is a minimal Desktop Environment. "The minimal Desktop Environment" is actually the important bit here. You have many choices of Desktop environments like, GNOME3 Desktop, KDE Plasma Desktop, MATE Desktop XFCE4 Desktop, but those are fully fledged Environments, lean alternatives are Openbox, i3, dwm and many others.
