They don’t even do server side encryption, though. Might as well use Gmail.

I’ve been using Skiff for just a few days. The interface looks polished, and they have e2e encryption. It’s relatively new though.

They do e2e to other skiff users, but given that the majority of your mail probably goes to none skiff users, what are you gaining?
