Because they know other companies require people to have phone numbers for "2FA".

I'm on vacation now. Had an o shit moment when my bank wouldn't let me complete a purchase because they just hadddd to SMS me, with no other option.
I’ve had that happen too. Unfortunately these seem like edge cases for most companies and sms based 2FA remains the default.

I’ve finally found a good workaround when traveling abroad: adding a local eSim for data-only and keeping my U.S. number on for receiving voice & text.

Google voice is an OK workaround. Bonus points: much more difficult to socially engineer your number away from you
