If you have an offer in hand you have some power, you can take it or not. If they want you to work on a take home project for 40 hours that's one thing, but if the interview is reasonable to do you should do it.

exactly - I always try to "assume the best" about others

but sometimes "the best" is actually "pretty bad" :)
