That's strange, my latest Google Pixel has enough computing power that I could easily do my frontend development on it if I connected screen and keyboard and if the OS supported it.

I wouldn't be keen on writing the code on touchscreen, but I would love to have one small device that I can "dock" when I need to switch to poweruser mode.

You can. A USB-C to HDMI cable with any Bluetooth Keyboard and Mouse. And install `termux` from the official app store. Vim/Emacs and every imaginable build chain work fine. You can even setup a vscode server to open in the browser if that way inclined.
I believe the Play store termux is outdated and it should be installed from F-Droid instead.
