That's called foveated rendering, and it's exactly what the Apple headset does, they mention it here: https://developer.apple.com/visionos/

For foveated rendering you still need good pixels everywhere in case you're looking to the sides.

I think what the OP means is that you'd have actually less physical resolution in the sides. Most headsets do this somewhat but not in a huge amount.
