I really don't care what happens to the note. I want mark-up but doesn't have to be markdown. I want WYSIWYG with 'limited' Markdown-esque formatting (i.e. if I set the font to something, then all notes should have that. If I change the 'default' color of notes, then all notes should update (themes). Bonus points if you can save/export into a plain-text viewable format.

So far, nothing fits this bill. Obsidian comes close but I have small issues with it.

100% agree. There are a lot of unnecessary features, that I rarely use. As a customer, you need a simple reliable service.
