Having watched the MKBHD video in question (https://www.youtube.com/watch?v=88kd9tVwkH8), I believe he's actually saying that iPhones light people's faces up uniformly, even when light is coming distinctly from one side. Most of the time, it's a pleasing look, but sometimes it doesn't look all that great. Apple went for "it looks better on average". And I think that's exactly what most people want out of the default camera app on their iPhone. If you want more control, there are some really great full manual control apps out there, e.g. Halide
