I just want a color e-ink tablet that I can install google play on.

If you don't mind the extra latency that comes with color e-ink the Boox Nova Air C will do exactly what you want. They're the only color Play capable Android option at the moment.

Personally I'm giving color e-ink another generation or two and just sticking to B&W on my readers for now.

the onyx boox tablets let you install the play store and have a few colour models as well
