But that's not how a fridge works. It runs seldomly, but when it does run it consumes at least dozens of Watts.

This is true. My new Samsung fridge is like this. I can't tell when it's compressor is running because it seems to always be running at a low rate.
LG was one of the first ones out there with their Linear Compressor series.
