This feels like the far end of the spectrum between super busy modern interfaces and interfaces that are going too far to be as lightweight and minimal as possible.

What ever happened to making stuff for a GUI that was simple and useful? It seems everything is feature packed or so simple it can be in a command line now.

I'd hazard to say that simple-looking but polished GUI programs are not so simple. The more expressive is the medium, the more small things you should take into account to avoid papercuts or visual unpleasantness.
