I'd suggest looking into Proxyman. The iOS app is free for basic features that would be sufficient for most of the users. The macOS app is also very intuitive (also free for basic features) to set up the SSL proxy.

It's also very user friendly for non-developers (I use it all the time with my non-technical support team).

Note: I'm not affiliated with Proxyman, I'm just a big fan/user of the product and respect what the indie dev has built!

Note that there's an iOS Simulator bug which causes Proxyman to not see all of the traffic, but only for iOS 15 and 16 simulators. Using an iOS 14 simulator is a work-around until Apple fixes this.
