Black and white movies have a number of advantages over color. You immediately know you are in an artificial story, like introducing your film saying "Once upon a timeā¦" :) Similarly, why do animation? Why take away all the detail of reality? Again, animation highlights the artificiality of the story, which can be a huge advantage.
