I have Comcast cable and watch it via an HDHomeRun with a cablecard. Only "premium" channels are encrypted and that's mostly just HBO. I use the "Channels"[1] software to record programs and save them directly onto my NAS. [1]:https://getchannels.com Of course, all cable providers also have their own DVRs.
