Control + L will turn the path bar into a simple string w/ autocomplete. Am I missing something here or are you talking about pasting a path into the filename portion of the dialog?

Hiding important features behind arbitrary keyboard shortcuts is definitely on my list of things I hate about modern desktop environments. (Not to mention, extremely unfriendly to accessibility.)
