Ask HN: What user data should I collect for online-only business?

Its a US-based online-only business (no shipping); planning to use Stripe (and maybe ApplePay) for payments. Do I really need to grab users' phone numbers and addresses? Maybe I need them for sales tax reasons?

What information do Stripe (& maybe ApplePay) want you to have, in order to clear payments at favorable rates (& have good options in case of disputes, etc.)?

What information would really be useful for customer service situations (account password reset, etc.)?

Dealing with sales tax is (often) a miserable hot mess. Doesn't Stripe have options, for handling most of that for you?

How long do you intend to retain this data?
