One roadblock for GNOME on mobile is a proper maps/navigation app. On android there exist a couple using openstreetmaps (like organic maps) but no offline maps & navigation programme for Linux.

Anyway I hope things will improve in the next year and even more hopefully I'll be able to help out.

If you can tolerate Qt or SDL on your system, there are a few options: https://linuxphoneapps.org/categories/maps-and-navigation/

Other than that, I think that the planned GTK4 port of GNOME Maps has the potential to improve things a lot.
