Initial NFTs were just pointers to some jpg on a vm somewhere no? Very "secure".

It's true, but think of it a different way. The blockchain lets you assert that you own the address that the pointer is pointing to. Anybody can copy the pointer, but to be able to claim ownership of a digital address is novel. Especially when you consider that not all blockchain use cases will be data that is public like the NFT JPGs.
