February’s Friday entrees, are vegan veggie tacos, Mediterranean chickpeas and black bean and plantain rice bowls. I think calling these new meals “vegan” almost buries the lede, in that they are also the first meals made of vegetables. |

The problem I see with some of these meals (and I say this from having a cafeteria at work) is that some of them sound great on paper but they are not fit for mass production and sitting in a lukewarm vat for 2hs.
