I hate explaining what I do. I'm a data scientist and 9 out of 10 times the person I'm talking to has no idea what it is and I honestly think the title itself is kind of cringey.

I usually just tell people I work on a "tech team for a finance company". If they show interest in what kind of tech team, then I'll go into more detail. Usually, the conversation just moves on.

This is very similar to what I say: “I work in software at a finance company”.

I do C++ programming, not data science, but again that’s not something that the average person cares about.

The average person probably thinks C++ programming is programming. I tried to buy a laptop once for development and the salesman kept insisting that I don't need a fast one for programming because C++ is just plaintext.
I laughed so hard at this. It takes a super computer to run resharper alone.

..Thank you!!

I agree.

Applied statistics?

I broaden it out, instead of narrowing down on something else. Software development is a close enough description for a general audience.
