The rendered actors look so close to reality but at the same time so obviously artificial...something is just off the mark. How would a cgi expert put it into words?

Not a CGI expert (although I can make a good looking cube in Blender).

"Uncanny valley" is the usual term - https://spectrum.ieee.org/what-is-the-uncanny-valley

A lot of it is soft light scattering. Skin is semi translucent and that is really expensive to try to simulate.
I can see what you mean. But at the same time, if I wasn't aware this was fake, I could watch a whole video like this without being tipped off that it's entirely rendered.
